Happy Fathers Day! (Sweet Potato Wraps continued)

I'm making a super special dessert today for our get together this afternoon at Muzzie and Papas house with Grammy and Gramps, my sister Stephanie and my little family. It is inspired by Mimi Kirks Raw Blackberry Cheesecake, but as usual, I did my own recipe. I'ts setting up in the freezer now, surrounded by my various ice cream sandwich experiments from the week. I will defenitly write about it tomorrow.

As promised yesterday...


Sweet Potato Wraps

This side makes them still look wet,
but once flipped you can see the firmness.


~After 5 hours in the dehydrator on 105  I removed the 3 wraps.

~Flip onto mesh tray.

They were fragile, so use caution when flipping them.

The smell while these were cooking was something wonderful!.

~Pour 3 more blobs of batter onto sheet and spread into circles.


~Place both trays back into dehydrator on 105 for 5 more hours. 




~After 5 hours, flip the 3 wet wraps onto a mesh tray.

Again, be very careful flipping. I found my second batch to be more difficult...I think they were thicker.)

~Check plyability of the 3 done wraps. They should be dry and firm but bendable and durable.







They seemed perfect to me! And again with the smell...my word it smelled good!





I whipped up a batch of sprout guacamole
and voila! a delicious veggie wrap

What Dee's Dehydrating Today...

Someone recently referred to this as
"milking the almond tittie!"
I literally laughed out loud :)

Hi there! I've been soaking raw almonds in water in the dehydrator (on very low) for about 15 hours maybe? I dumped, strained, rinsed, drained and poured them into the food processor. (Wish I had that Vitamix...)

I wrapped it up, the way I do (referring to previous blog with Creamy Almond Milk) and began the process. 

I pulsed them until a wet, almond crumble, and then flipped the bad boy "on" and poured, slowly, about 3 cups of water.
After about 5 minutes, or whenever I felt the base getting hot :( I  turned it off and let everything drip into the bottom. 

Then it all gets poured into this sack (note to self: still need to get a nut milk bag from JUSTFOOD!)

I cinch the string and  slowly squeeze the sack. Be be sure to have a large bowl underneath because there is a  lot of milk and it doesn't exactly come out in a nice stream, like breastmilk.
Here is what remains...

About 3 cups of Almond Milk
About 10 pounds of Almond Crumble

*I hear the nut milk bag can get more milk and thus less pulp, which is a good thing! I really need to invest...

I always freeze this in hopes of using it in the future, and only recently started following through on this goal.

Yesterday and this morning I posted 2 blogs that used Almond Crumble in their cookies...both were delicious!

I LOVE Creamy Almond Milk. Maybe my version is creamy because small almond granules get through the bag and make my milk a little thicker? Not sure. But either way, it is so good and so simple and so healthy!

Sweet Potato Wraps
Inspired by Mimi Kirk, but my own recipe

 INGREDIENTS:
4                       Medjool Dates (soaked in water until soft)
2-3    Cups       Sweet Potato
1"                     Ginger (grated)
2       shakes     Cinnamon (I just ran out my fresh)
2       Tbsp        Extra Virgin Olive Oil
1/2                    Ripe Banana
1/2     Cup         Hulled Raw Hemp Seeds
1/2     Cup         Raw Chia Meal (ground chia seeds)
Lots    of            Water!
DIRECTIONS:

~Pit the dates. Very important!

~Pulse dates until they are pasty.

~Add everything except seeds and run until smooth.

~ Add seeds and blend.
Before seeds

After seeds.

After water.
~Add enough water to make it pourable but still thick...like a pancake batter.

Another note to self: get more of these sheets.
(Excalibur Dehydrators website perhaps?)
~Poured 3 blobs of batter and shaped them evenly into circles.

~Dehydrated on 105 for 5 hours.

~Flipped over onto normal mesh screen.

~Spooned 3 more blobs and circled them.

~Put both trays back in for 5 more hours.

~ Plyable wraps are done. Flip second batch onto mesh. Repeat.

Will post pictures of the final wraps tomorrow...

Mix it all in a big bowl and let it sit to marinate for ~10 minutes.
Dehydrate 105 for 3 hours. Done.
Good luck getting them to a bowl before eating them all!
 Cajun Kale Chips

Kale, any kind of your choosing
Sea Salt
Extra Virgin Olive Oil
Black Pepper
Nutritional Yeast
Turmeric
Curry Powder
Cayenne Pepper
Garlic Powder
Dried Mango
this is so nothing special, I can't put my name on it!

Cut Mango into thin slices
Place on tray
Dehydrate 105 for about 1 day.

That's it! They are a delicious snack for tomorrow :)

Raw Recipes: Lemon Sesame Seed Ice Cream Sandwich

Lemon Seasame Seed Raw Ice Cream Sandwich

These are surprisingly delicious...I promise you :)

INGREDIENTS:
again, these are rough estimates, as I concoct what I feel


1       Cup        Almond Meal (ground up almonds or leftover crumble/pulp from almond milk)
1/4   Cup         Oat Flour (ground up oats)
1      Tbsp       Cacao Powder
5                     Medjool Dates (soaked in water until soft)
1      Tbsp       Raw Agave
1      Tbsp       Sesame Seed
1      Tsp         Lemon Juice


DIRECTIONS:


~In this order, I pulsed these ingredients into my food processor until it formed a beautiful golden dough.


~As always, I encourage taste-testing your experiments to adjust what might be needed and to enjoy a healthy sample :)


Roll dough into small balls, maybe the size of a cherry.
Place small glass into large glass filled with water.
Peel off shaped dough carefully.
Lay on dehydrator (or parchment paper-lined baking sheet).
Repeat. Making sure to dip small glass into water before each press.
Made 37 cookies, but really almost 40...I had to sample, of course!

Raw Lemon Seasame Seed Ice Cream
(I was sooo pleasantly surprised at how delicious and cooling this was.
It'd be perfect for a summertime gathering, or anytime really!)

~Trick-of-the-trade: do these steps as quickly as possible.
~The ice cream will have a firmer, thicker hold on the cookie.
~Freeze immediately.

Break up 3 frozen bananas from the freezer

hmmmm, what shall I add?
1/2 tsp Chia Seeds
1/2 tsp Sesame Seed




2 Tbsp Creamy Almond Milk
Juice of 1/2 Lemon

Everything goes directly into food processor.
Pulse all ingredients until smooth.
Stop to scrap the sides and sample!

Oh my...it is sooo good!
It resembles a creamy italian ice.

Take a spoonful of the ice cream and place it on a cookie.
I found it best to line up a bunch of cookies,
spread them all with ice cream,
then top them all off quickly before rushing to the freezer.






This was such a beautiful ice cream.




I froze the leftover ice cream and had it for dessert last night.

Mama's always got help in the kitchen :)
After 30 minutes in freezer I had to sample.
I was delighted with them!
For something done on a whim,
and not necisarily a common flavor combination,
it is a melty crunchy gooey burst in your mouth :)

Raw Recipes: Chocolate Ice Cream Sandwich

There has been such an interest among my real-life friends, Instagram followers and fellow Facebookers for requests of some of my recipes that I've been posting pictures of lately. I am happy to share :)


Chocolate Raw Ice Cream Sandwiches

(Inspired by Mimi Kirk, but my own recipe)

INGREDIENTS:
these are all rough estimates, as I usually concoct what feels right

1     Cup       Almond Meal (ground up almonds or crumble/pulp leftover from making almond milk)
1/4  cup      Coconut Flakes, ground into a powder
1/4  cup      Cacao Powder
2     Tbsp    Raw Agave
3                   Medjool Dates (soaked in water until soft, I also put mine in dehydrator)
pinch           Sea Salt

DIRECTIONS:

~In this order, I gradually pulsed these ingredients into my food processor and they formed a beautiful dark dough.

~I encourage tasting throughout the process. The individual flavors alone as well as married together have such a lovely effect on your pallet and your body. It's good to adjust spices or flavors if you feel like it.

I forgot to take a picture of the ingredients and the mixed dough (like I did with the Creamy Almond Milk in a previous post), but below is a demonstration with a different raw cookie dough...Lemon Poppy Seed Peanut Cacao Cookies (more on those tomorrow).

Peel off shaped dough carefully.
Lay on dehydrator (or parchment paper-lined baking sheet).
Repeat. Making sure to dip small glass into water before each press.

Put in dehydrator on 105 for 4 hours. Flip. Sample.
Many hours later, or for me overnight, they became cookies!
Firm, chewy, flavorful, special cookies!
And they're raw!
(If using an oven I would bake them on the lowest temperature possible
and check frequently as they might get harder faster?)
Raw Chocolate Ice Cream (and Penelope)
~Take freshly blended Raw Ice Cream (has been in other posts, but will make a recipe for it soon in another blog) and place a spoonful onto one cookie and top it with another cookie.

~Freeze immediately.

~Eat the leftover ice cream, if there is any :)


30 minutes later a sample is needed to determine quality, of course.
Can I just say, I LOVE experimenting with raw recipes!
This, served with Creamy Almond Milk, is delicious.
As you can see, I have lots of help in the kitchen :)
